Nutty brown rice decorated with sharp picked onions, fresh veggies, sauteed mushrooms, a jammy egg, all drizzled with a tangy sauce make this a satisfyingly delicious breakfast.

This recipe has become a favourite on Saturday mornings. It has changed a little based on what is in my fridge but there are a few constants that make it so tasty.






Pickled shallots are something I make regularly. I blame my grandfather who always had a jar made for his famous burgers. Link to recipe: PICKLED SHALLOTS
This recipe is very flexible. If you hate mushrooms, zucchini or peppers are a great substitute. The brown rice can be substituted with white rice or quinoa. Arugula is also a yummy addition.
