Zesty Spinach & Grilled Pepper Salad

My first extended family supper of the summer and I needed a delicious salad to compliment my aunt's potted garlic chicken. I had beautiful peppers and fresh spinach to work with. I grilled the peppers with a little olive oil, salt and pepper.
Next I chose some creamy cashews and salty feta to jazz things up.
Then there was the ever important dressing. I decided on a warm dressing with lots of shallots and garlic sauteed and then some added ZING.
