Thai Coconut Soup

When I left Thailand after 6 years there I knew that one of the things I would miss the most was the food. So I vowed to learn how to make all the things I loved to eat before I left. I did learn most of my favourite dishes and over the years I've altered them based on what is available and to suit my family's tastes. This soup is one of my dad's favourite things to eat so I made sure this soup was part of my Thai repertoire.
