This dish is so delicious and really quite easy. I've made this with both shrimp and beautiful thick pieces of haddock. The vegetables are versatile as well and what you have in your garden or fridge is highly encouraged. This is an impressive dish for guests who come over for supper during the summer or hardier vegetables like squash and frozen peas in the winter.


When I found this fish, I wanted it to stay in tact and not fall apart. I cooked it on the barbecue with just a little olive oil, salt, pepper and some lime slices. They steamed beautifully on the barbecue and then were placed in the serving dish. I poured the curry sauce with the vegetables and shrimp gently over them.
