Quickie Lunch - Soba Style

This simple lunch has become a blog post for the lovely ladies in the workroom at school. They smell me heating up this ten minute noodle dish and exclaim, "What's in that? It smells so good." It's true, it smells very yummy. So, I'm sharing this quickie that I make when in a pinch or wanting some spicy noodles. I never use measurements for this, and you don't need to either. I will give you some approximations for the sauce, but you need to adjust for your taste.




Soba or buckwheat noodles only take 3 minutes to cook! I usually cook two bundles and there is enough for a snack and a lunch or two for the family. Cilantro is a must here, in my opinion, but I sometimes also add other veggies: thinly chopped kale, snow peas, julienned carrots or peppers. You could add the veggies to the last minute of boiling if you wanted to slightly cook them or just go raw.
