Potluck Soba Salad
A fresh noodle salad that steals the show at any potluck.

This will become your go to potluck pasta salad, I promise. It is healthy, fresh and travels really well. I started making this a lot last year for volleyball tournaments and it was a crowd pleaser. You can change it up to make it more suited to your family and there are cheats you can use to make it a very quick meal.




These are the veggies I most commonly use but there many more you could use. Halved cherry tomatoes, bean sprouts, sugar snap peas, red or green peppers and thinly sliced kale or spinach are all good in this salad. An easy cheat you could use if you don't wish to chop any veggies is to buy a package of coleslaw mix and use that instead of some or all of your veggies.


The sauce is the key. You can tweek it to your tastes, adding more ginger, garlic or lime. I like to use my microplane with the ginger and garlic, it's quick and easy. I keep my ginger frozen and it makes it very simple to microplane and it never goes bad.
