This is not your truly authentic phat thai but it is a delicious version which does not involve the tedious task of making tamarind paste. I have integrated some veggies to make it a more rounded meal and left out the tofu which no one in my family, but myself, likes.


I used snow peas, red peppers (thinly sliced) and the two necessities: green onions and bean sprouts. I chose those veggies because they have a similar cooking time so I could throw them all in together making it a bit of a no brainer.


I usually use uncooked peanuts in my recipes and dry fry them over medium heat BUT.... they were challenging to find so I went in the opposite direction. I used lime-chilli peanuts. We loved it but feel free to use plain peanuts if that is all you have.
