My cousin Taylor went to a vegan cooking class and came back with this delicious and inexpensive pesto recipe. You can't tell the main ingredient is kale, nor that it is missing parmesan cheese and pine nuts. It is an incredibly versatile pesto and freezes well. When I make this I always double the recipe and freeze small amounts in little ziploc bags.
