Jicama Salad

This salad is so delicious and unlike other salads, gets more delicious as it sits in the fridge. The downside is that finding jicama in Canada is not always easy. Jicama is a versatile tuber that is somewhere between a turnip and an apple. I have replaced the jicama, when unable to find it, with crisp Granny Smith apples. They are a very good substitute.
