When tomatoes are in season, that is obviously the best time to make this salad. They don't need much to impress and can make tomato haters into lovers.
Once upon a time I hated tomatoes. It was grade 12 and I went to Toronto to visit my elderly great aunt. My mother gave me the lecture on manners before arriving, as if I was 6, but it worked to make me anxious regardless. So when my aunt asked me if I would like a tomato sandwich for lunch, I said "Yes please!" with a smile on my face but not one in my heart. She slowly made her way to the back garden where she plucked a large ripe tomato. She then opened the sides of the toaster, which I had never seen, and toasted the bread in her ancient contraption. A little mayo, slices of ruby red tomato and crisp toast and I was given my first ever tomato sandwich. My mind was blown. I thought I hated tomato, I was wrong. Best. Sandwich. Ever.
