Ahhh, the beet, loved and hated by many. Are you like my friend Tara who is once quoted as saying "I hate beets, they taste like dirt." Or, are you more like Chris Pratt who said, "I have some weird habits. For instance, I love beets. Show me a salad bar and I will clean them out of their beets." If you are of the latter opinion, you will like this salad.

When beets are in season, I buy a big bag of them and wash them, wrap them in tinfoil, roast them for an hour, peel them, half them, then place them into freezer bags and freeze them. This way I am not dealing with the messiness of beets for many months.
